Autumn Conkers Squirrels Porridge

Well, summer has well and truly gone for another year and autumn is upon us. That doesnt doesnt bother me as much as it may some people. I mean dont get me wrong theres something in every month I love. Spring is all about freshness and new starts. Summer, bursting with activities. Winter, full of Christmas spirit. But, for me, I think autumn is a special season, not only unlike the other seasons brings about a calming and relaxed sense, but it mashes together the best bits from the other seasons.

Porridge, my staple breakfast for the colder months, gradually making its return. Theres something really comforting, sitting down to a nice bowl of porridge, the way it warms you from the inside and gives you that extra bit in the battle against the colder mornings. 

I always look forward to those particular mornings when I open the door to a cool, refreshing air - that revitalises me. But more so when that air is paired with the appearance of the beautiful wintry sun. You know the one I mean?! The one that we see but we dont feel, the one that even though its lowness blinds us, it instantly brings a smile to our faces, the one that seems to bring all the seasons together.With the added rustle under my feet from piles of fallen leaves scattered on the ground, their vibrant colours almost creating pieces of art - especially when the crisp wind lifts them up and swirls them around.  Those are the mornings I love.

The return of acorns, conkers and spinning jennys. I remember in primary school when I my conker collection would sometimes get a little excessive - coming home each day with a few more to soak in vinegar, which I think helps preserve them, then placing them in a shoe box along with the rest. Did anyone else used to sing the song about conkers in primary school? We always had seasonal songs, but this was by far my favourite and I even still sometimes find myself singing it, well the parts I can remember (conkers, Im collecting conkers, Im trying hard to find the biggest and the best!) 

Today on my way to college I noticed the sudden appearance of spinning jennys and I held back the temptation to pick a few up, throw them into the air and watch them as they gracefully fall back to the ground. Again, back to primary school, throwing them over each other, almost like autumn itself is showering us with its beauties.

We cant forget the woodland creatures, even though they do seem to be around throughout most of the year, I always associate squirrels, badgers and owls with autumn. Another memory of my childhood pops into my head - Autumnwatch. I used to watch that show religious each night! Following the little animal families, was just too cute. I think the only reason I stopped watching was because the hosts changed (Kate Humble and Bill Oddie ftw!)

Of course though, being British and all, I have my complaints with the weather. Autumn is a season in which risking it without a coat means youll get cold, but then with a coat paired with walking briefly for 5 minutes and you get too hot. But that doesnt bother me half as much as when the heavens decided to open. You end up battling against the harsh wind that lashes rain towards you, the wind that on good days can be so refreshing and gentle. Your hands numbing as they grip onto your umbrella. We cant forget how the leaves create a slippery, deadly path after being soaked by the rain.

But that just makes walking through the door when you arrive home so much more comforting. When your hair finally being able to fall and stay down, popping the kettle on, snuggling into the blanket and turning on your laptop or TV. 



The spring, summer, is quite a hectic time for people in their lives, but then it comes to autumn, and to winter, and you cant but help thing back to the year that was, and then hopefully looking forward to the year that is approaching. - Enya

Its Beginning To Look A Lot Like Christmas

Yes, you heard me correctly, Christmas is coming. I hear you saying but wait its still practically 2 months away. Thats perfect! 

I know Im not the only one who starts getting excited for Christmas way earlier than I should. From around mid September, I get random bursts of Christmas spirit, the Christmas songs get sung, I spend countless hours on pinterest looking at cute gifts and DIYs and crave mince pies and Christmas cake. Does anyone else do this? 

I dont know about you but, as much as I love Christmas day, I prefer the build up. Whereas with Christmas day you spend with people close to you, the build up you spend with everyone and I find it so special that it brings us all together. Theres people smiling everywhere you look, wrapped up in their hat and scarfs, with red noses glowing, carrying a loved ones special gift and children laughing and getting excited for father Christmas.

Earlier this week I began preparing our Christmas Cake, soaking the fruit to make them plump, and I may have bought a good few gifts - I hate the rush of leaving it till a week before. With the shops now at the point of bringing in their Christmas stock: decorations, cards and my favourite festive foods, I cant wait till Christmas is in full swing. Hopefully, some snow will begin to fall and well have a white Christmas! 

 The Christmas scents! Mmmmm! Personally my favourite scents are food related, no surprise, and I got my first waft when baking the cake. Even just the smell of the fruits soaking in slightly watered down rum was enough to get me singing Shakin Stevens, but as with any baked goods, when they are in the oven and the scent fills your house you just want to eat the whole thing there and then. Not to mention the fact that it was baking away for 4 hours. But Ill have to wait quite a while yet as it has to be wrapped up to mature so itll be twice as good - especially when topped with marzipan and icing! I did make a little loaf cake along side for my grandma and its so cute! 

If youre wondering, I followed Mary Berrys recipe, but did substitute a few things: rum instead of brandy, golden syrup instead of black treacle and I left out around 70g of sugar so it wasnt overly sweet when topped with marzipan.

Autumn Wishlist

After looking in my wardrobe the other day and not really getting any sense of excitement about wearing any specific outfit, I thought it was a sign that I may need to purchase a few new things for the Autumn months. So a few hours were spent looking for some great items and styles and Ive put together a small wishlist of things I hope to pick up.

I fell in love with this pair of boots! Theyre from Zara, and  from the childrens section (yay for having size 4/5 feet). I have been wanting a simple versatile pair of boots for a while and loved the style of Chelsea boots.

The next items is a dress from Topshop. I originally came across this dress whilst watching livinlikelindseys vlog and I think thats when the decision that I wanted this dress was made. I love the green khaki colour and I think it would be perfect for Autumn. But I also love the fact it looks like a separate top and skirt.

I currently dont own anything that is of a mustard yellow colour, but suddenly this year Ive felt a weird need for something of the colour to be in my wardrobe for autumn. These 2 items are from H&M, I think both items would be easy and comfortable to wear. Firstly the blouse could be worn simply with some skinny jeans, boots, a big cardigan and knitted scarf. Jumpers seem to be a weakness of mine and I always find myself drawn to them more than anything else. I would personally wear this jumper with a white collar, leggings and boots.

I would love a coat of this style in my wardrobe, its a bit more dressy than the ones I already own. Sometimes you just want to look a bit more fancy. This coat is from H&M and also comes in a grey colour - but Im a bit indecisive on which colour Id go for. Ive also seen similar versions while passing Primark, but as they dont have a shopping website I couldnt find those coats.

I currently only own one skirt. Shocking, I know! So Id love to expand my collection and I think autumn is the best season to wear skirts. Simply pair them with a cute comfy jumper, tights, and boots and youre set to go. This skirt from urban outfitters is perfect, he colour is a popular colour for the season!

Peanut Butter Date Bites Healthy Delicious Snack

Ive been super busy recently, with not only returning to college (and forgetting the amount of work I constantly have) but attending university open days practically every weekend - Ill hopefully write a blog post on this topic in the near future. 

With all the rushing around and trying to work hard from the beginning of the year, I have found myself hungrier than usual and snacking more frequently. So I needed something I could turn to that would satisfy me in-between meals. This is definitely the thing!

I cannot even begin to express how amazing these taste! Now, I can sometimes find dates a bit sickly sweet, but paired with the peanut butter, it balances out the sweetness perfectly. Surprisingly, just 1 or 2 of these bites is enough to fill you up! The best thing about them, as they are baked, is that you can pop them in a food bag and take them on the go with you. 

However, you can pop them in the fridge and enjoy them as a fudge like snack, so maybe split your batch when you first make them and see what your preference is. 

Soft, chewy cake like goodness with the added extra crunch from the walnuts and seeds, these bites are by far my new favourite snack (and hopefully yours too).

Ingredients
Yields around 19 small bites
  • 1 1/2 - 2 cups of pitted dates
  • 1/2 cup rolled oats
  • 2 tbsp peanut butter
  • 1/4 cup walnuts (crushed)
  • 1/8 cup of pumpkin seeds, pine nuts, sunflower seeds etc
  • 1-2 tbsp of non-dairy milk (to help loosen the dates if needed)



Directions


1. Preheat your oven to 180°c and line a baking tray with greaseproof paper.
2. Place your dates in a bowl and cover with hot water, leave to soften for 20-30 minutes.
3. Drain the water and place the dates into a blender or food processor and blitz until they become a smooth consistency, if needed add a drop of milk to help loosen and soften the dates.
4. Next, transfer the date mixture into a bowl and mix in the peanut butter.
5. Then fold in your walnuts and seed(s) of choice.
6. Gradually pour in your oats and combine thoroughly.
7. With your hands, roll the mixture into balls of your preferred size (I make mine around the size of a tsp) and place them onto the baking tray. If you are deciding to split the batch and refrigerate some, follow the same steps and place the bites onto a separate baking tray, also lined with greaseproof paper and pop them in the fridge. They are best when left for over 4 hours. 
8. Finally, pop the bites for baking in the oven for around 7-10 minutes or until firm to touch (leave them for another few minutes if you make them slightly bigger). Once baked, leave to cool then enjoy!
